  1. Mix everything but the cheese and scallions/shallots in double boiler.
  2. Once the wine is warm, mix in the cheese.
  3. Once the cheese is melted, mix in the scallions.
  4. Mix in small spoonfuls of the thickening agent until the fondue is of the desired consistency.
