Slow Cook
  1. Place vegetables in bottom of slow cooker
  2. Top with chicken, spices and water
  3. Slow cook for 8 hours on low
Roux
  1. In a small sauce pan, melt butter over medium heat
  2. Add corn starch to the butter and whisk constantly for about 5 minutes
  3. Add milk and butter/flour to roux until thick and bubbly
Assemble
  1. Pour all stock from slow cooker into a large pot, leaving vegetables and chicken in slow cooker
  2. Add completed roux to the large pot. Whisk, adding additional corn starch as needed until desired thickness
  3. Add vegetables and chicken from slow cooker
  4. add vegetable mix (precook as required)
  5. warm stew as required
